Vege update:
Social scientists and law enforcement officials have identified animal abuse as a symptom of emotional illness and a precursor to violent crimes against human beings. To allow individuals guilty of perpetrating such cruel acts to go unpunished or not sufficiently punished would be to sanction these horrific crimes and would permit them to go on to possibly commit violent crimes against humans.

Cheese Ravioli with Grape Tomatoes

Serves 4

A cheerful Summer pasta dish, this entrée builds on several basic ingredients for a quick-cook meal. Serve with a tossed green salad, brownies or blondies and fruit juice.

Ingredients:
9 oz. fresh cheese-filled ravioli (or make your own using the recipe below)
2 Tbs. olive oil
1 bunch fresh spinach, rinsed and stemmed
2 cups grape or cherry tomatoes
1 Tbs. hing powder
Salt and freshly ground black pepper to taste
4 Tbs. grated Parmesan cheese

Bring a large pot of lightly salted water to a boil over medium-high heat, and add ravioli. Cook for 3 to 5 minutes, or until ravioli float to surface and are tender. Remove from heat, drain, and set aside.
Heat oil in large skillet over medium heat, and add spinach, tomatoes, hing powder, salt and pepper, and sauté 5 to 7 minutes, or until spinach and tomatoes wilt. Stir in ravioli, and cook for 2 to 3 minutes more. Remove from heat.
To serve, spoon equal portions onto individual plates, and sprinkle evenly with Parmesan cheese.

QUICK AND EASY RAVIOLI DOUGH

http://www.mangiabenepasta.com/ravioli.html

Ingredients:
2 cups all-purpose flour
1 tsp. Salt
2 TB. Unsalted butter
1/2 cup boiling water

Method:
In a food processor, place the flour and salt.  Add the butter and pulse until the flour has the texture of rough cornmeal.  With the machine running, slowly add the water.  Gather the dough into a ball and place on a floured surface.  Knead lightly, just until the dough is smooth.  Divide in half and keep one-half covered while you work with the other.  On a well floured surface, roll out the dough to 1/8-inch thickness.  Using a round cutter 3-inch in diameter cut out dough rounds.  Using a tablespoon, place mounds of filling on 1/2 of the rounds.  Place an unfilled round on top of the filling and press the edges of the dough together firmly between thumb and forefinger.  Moisten edges with a little water if they are not sealing properly.  Place rounds on a surface that has been dusted with cornmeal.  Cover with a towel or plastic wrap.  Repeat procedure with the remaining half of dough.

Completed ravioli can be refrigerated for a few hours before cooking.  They can also be frozen by placing them on a cookie sheet and freezing until firm and then storing in a plastic bag for 2-3 months.  Cook ravioli in salted water until they rise to the top, 3-4 minutes for fresh ravioli or 9-10 minutes for frozen.

RAVIOLI and or PIEROGIS (Stuffed Pasta Pockets)

Ingredients:
3/4 c. flour
1/8 tsp. salt
2 tbsp. sour cream
1 tbsp. milk
1 tbsp. melted butter
Vegetable oil

FILLINGS:

Mashed potatoes with cheese
Sauerkraut
Mashed potatoes with dried cranberries
Blueberry

(If fruit is used, add 2 tablespoons sugar to dough.)

Combine flour and salt in bowl. In a separate bowl whisk sour cream, milk, butter. Add flour to liquid and mix until like cornmeal. Knead on floured surface until smooth. Cover and let rest about 30 minutes. Roll out until 1/8 inch thick. Cut dough in 3 1/2 inch rounds. Repeat until all dough is used.

Fill with 2 tablespoons of selected filling. Fold dough over filling and seal edges and brush with milk. Bring a large pot of salted water to a boil. Drop Pierogis in water one at a time. Cook until tender. Pan fry in a little oil if a crisp crust is desired.

KEEPING and COOKING RAVIOLI
75 Ravioli (5 servings) Bring to a fast boil, 6 quarts of water. Add 1 tablespoon of salt. Take 75 ravioli from freezer and immerse them all at once in the boiling water. Stir lightly to keep floating separately for about 1/2 minute. Cover so that water will come to a boil again, until lid is raised by steam foam. Uncover, stir, let boil for another 5 minutes, until ravioli are floating at top of pot and are cooked. Turn off stove, sprinkle a few tablespoons of cooking oil over ravioli and stir 1/2 minute. Add 1 quart of cold water to stop ravioli from softening. Drain in a colander and return ravioli to the pot. Place 12 to 15 ravioli per person on platter and pour 3 or 4 large spoonfuls of sauce over center of ravioli and to complete a delicious dish, sprinkle a spoonful of grated Romano or Parmesan cheese to taste.

SIMPLE FRESH PASTA

Ingredients:
3 c. Semolina flour
2 tbsp. olive oil
1 c. warm water

Put flour onto board, make a center well. Add olive oil and a small amount of water. Mix, bringing flour from around edges, kneading together. Continue kneading and adding water until dough forms into a smooth ball.

Cover dough with a bowl for 15 minutes. Divide dough ball into 3 pieces and roll into 1/8 inch sheets. Cut strips into desired widths, or use a pasta machine for making spaghetti, or any forms. Dry for 1 hour before cooking and remember, fresh pasta cooks more quickly than dry.

DOUBLE PASTA SPECIAL

Ingredients:
1 packet yeast
1 c. lukewarm water
1 tbsp. sugar
1 tsp. salt
2 tbsp. oil
2 1/2-3 c. flour
1/2 lb. mozzarella cheese
1/2 tsp. oregano
1/4 c. Parmesan cheese

Soften yeast in warm water. Add sugar, salt and oil; mix well. Gradually add flour to form a stiff dough. Knead 2-3 minutes. Cover; let rise 1-1 1/2 hours. Roll out half of dough to a 15 x 10 inch pan. Spread with cheese filling. Roll out remaining dough and place on filling. Cover with sauce. Bake at 400 degrees for 15 minutes. Sprinkle with mozzarella cheese, oregano and Parmesan. Bake 10-15 minutes or until golden brown.

Rainbow Slaw
http://www.vegetariantimes.com/recipes/9890?section=
Serves 8

Salting the cabbage before making the salad draws out excess moisture, so your slaw won’t be watery.

Ingredients:
1/2 small head green cabbage (about 1 1/4 lb.)
1/2 small head red cabbage (about 1 1/4 lb.)
1 large carrot, peeled
1 Tbs. kosher or coarse salt
2 Tbs. mustard seeds
1 Tbs. vegetable oil
1/4 tsp. chili flakes
1/2 cup cider vinegar
1/4 cup sugar
1 tsp. Dijon mustard
1 red bell pepper, cut into thin strips (about 1 1/2 cups)
1 yellow bell pepper, cut into thin strips (about 1 1/2 cups)

Slice cabbage into thin strips. Grate carrot on largest holes of box grater.
Combine cabbage, carrot and salt in large colander set over bowl. Refrigerate 1 1/2 hours. Rinse off salt under cold water. Pat dry.
Put mustard seeds, oil and chili flakes in small skillet; cover and cook over medium-high heat 1 minute, or until seeds start to pop, shaking constantly. Remove from heat and continue shaking pan until popping subsides. Cool in bowl. Whisk in vinegar, sugar and mustard. Season to taste with salt and pepper.
Combine cabbage, carrot and bell peppers in large bowl. Add dressing, and toss to coat. Adjust seasonings. Serve immediately, or store up to 1 day in refrigerator.

Little Lemon Creams

Take three ingredients and you'll soon have a luscious dessert to offer and later to dive into.

Serves 6-10 (depending on size)
Ingredients:
500ml (18fl oz) double (heavy) cream
140g (4½oz) caster (refined granulated) sugar
juice of 2 lemons

Method:
Place the cream and sugar in a saucepan and bring to the boil.
Simmer for 3 minutes, remove from the heat and whisk in the juice. Spoon into small cups , glasses or bowls and chill for 3 hours before serving.

Note: If you want to make these lemony deserts more zesty, simply grate in the rind of 1 lemon and mix with the lemon juice before adding to the boiled cream and sugar.

For orange creams, replace the juice of 2 lemons with the grated rind and the juice of 1 orange.

Banana Tatin

Serves 6
Preparation time - 30 minutes
Cooking time - 1 hour

Ingredients:
75g/3oz butter
2 tbsp granulated sugar
300g/11oz puff pastry, thawed (if frozen)
5 or 6 bananas, just ripe
Juice of ½ lemon
Cream, to serve

Method:
1 Smear the butter over the base of a thick-based, 20cm/8in diameter ovenproof frying pan (not with a plastic or wooden handle) and sprinkle on the sugar. Refrigerate for 20 minutes. Roll out the pastry to a rough circle, about 30cm/12 wide. Wrap in clingfilm and chill.

2 Preheat the oven to 220°C/425°F/Gas 7. Peel the bananas and cut into 7cm/3in pieces. Put upright in the ovenproof pan, fitting them closely together. Squeeze lemon juice over.

3 Put the pan on the hob, over a medium heat, for 8 to 10 minutes, until the sugar caramelises. Remove and cool for 10 minutes.

4 Drape the pastry over the bananas and tuck into the pan. Neatly trim off any overlap and make two cuts in the top to allow the steam to escape. Bake for 15 minutes. Invert onto a serving plate, cut into wedges and serve with a dollop of fresh cream, if you like.

TIP: If you don’t have an ovenproof frying pan, heat the butter and sugar in a small saucepan, over a low heat, until the mixture turns light brown. Pour into a 20cm/8in cake tin (not one with a loose base) and arrange bananas in it. Squeeze lemon juice over, cover with the pastry and bake as above.

Making Food Sacred - Offering our food to Krishna:
....excerpt from lecture by HDG Srila A.C. Bhaktivedanta Swami Prabhupada - Srimad-Bhagavatam 1.3.1-3 -- San Francisco, March 28, 1968

The Vedic literature says like this, that God has no leg, no hand. Therefore the impersonalists take advantage of it. "Oh, here it is stated God has no legs, no hands." But the next line is, javana grhita: "He can accept everything which you offer Him in devotion."

Now how He can accept? If He has no hand, how He can accept things from us? That means He hasn't got a hand like us. His hand is different. Therefore even though He is situated in the spiritual world, which is far, far away from us, still, He says in the Bhagavad-gita, it is said,

patram puspam phalam toyam
yo me bhaktya prayacchati
tad aham bhakty-upahrtam
asnami prayatatmanah

Krsna says that "A little flower or little water or a little leaf, whatever My devotee offers Me in love and devotion, I accept it." And tad aham bhakty-upahrtam. "And because he has brought it with great devotion, therefore I eat." Tad aham bhakty-upahrtam asnami. Asnami means "I eat." Now you can say, "All right, I'll offer these fruits and flower to God, but it is the same. It is remaining. How He is eating?" But His eating is not like my eating, because He hasn't got a body like this. This body is material. If you bring me a plate of fruits, this body immediately swallows it. But He has got spiritual body. He eats... Simply as soon as He knows that you have offered it in devotion, He eats immediately.

Go here to follow the simple system for offering foodstuffs to the Lord
... and always with the Magic ingredient - Offer it to Krishna.....

Points of View
I don't know if Shel was actually a vegetarian or not, but he did do some pro-veg works like the following:

Thanksgiving dinner's sad and thankless,
Christmas dinner's dark and blue,
When you stop and try to see it
From the turkey's point of view.

Sunday dinner isn't funny
Easter feasts are just bad luck,
When you see it from the viewpoint
Of the chicken or the duck.

Oh, how I once loved tuna salad,
Pork and lobsters, lamb chops, too,
Till I stopped and looked at dinner
From the dinner's point of view.

Cruelty to Animals: Mechanized Madness

Watch the Video

Animals on today's factory farms have no legal protection from cruelty that would be illegal if it were inflicted on dogs or cats: neglect, mutilation, genetic manipulation, and drug regimens that cause chronic pain and crippling, transport through all weather extremes, and gruesome and violent slaughter. Yet farmed animals are no less intelligent or capable of feeling pain than are the dogs and cats we cherish as companions.

“If anyone wants to save the planet, all they have to do is just stop eating meat.
That’s the single most important thing you could do. It’s staggering when you think about it.
Vegetarianism takes care of so many things in one shot: ecology, famine, cruelty.”
--Sir Paul McCartney
