Amish Cabbage
Ingredients:
1 lg. head cabbage (about 3 1/2 lbs.),
cut into 1-1/2" chunks
1/4 c. (1/2 stick) Parkay margarine,
divided
3 tbsp. flour
1/2 tsp. paprika
1 c. milk
1 lb. Velveeta pasteurized process
cheese spread, cubed
2 c. croutons
Instructions
Cover cabbage with water in Dutch oven; bring water to boil. Cook 2
1/2 minutes; drain well. Heat oven to 350 degrees. Melt 2 tablespoons margarine
in saucepan over medium-low heat. Blend in flour and paprika. Gradually
stir in milk; cook, stirring constantly, until mixture thickens and comes
to a boil. Add cheese spread; stir until melted. Add cabbage. Pour into
12" x 7 1/2" baking dish. Toss croutons with remaining melted margarine.
Sprinkle over cabbage mixture; cover. Bake 25 minutes. Uncover; continue
baking 20 minutes or until croutons are toasted. Let stand 10 minutes before
serving. Serves 8.
Kurma's Khichari recipe.
Hearty One-pot Melange of Mung Beans, Rice & Vegetables (Khichari)
Khichari (pronounced "kitch-eri") is such an important dish for vegetarians that I have included a different recipe for it in each of my cookbooks. The flavoursome, juicy stew of mung beans, rice and vegetables is both nutritious and sustaining. It can be served anytime a one-pot meal is required You can practically live on khichari, and in fact, some people do. I eat it accompanied by a little yogurt, some whole-wheat toast, lemon or lime wedges and topped with a drizzle of melted ghee. Bliss! Serves 4-6.
Ingredients:
½ cup split mung beans,
washed and drained 6 cups water
1 bay leaf 1.5cm
(½-inch) chunk ginger,
chopped fine 1 small green chili, seeded and
chopped
½ teaspoon turmeric
2 teaspoons coriander powder
1 cup Thai rice, or other long grain rice of
your choice
1 packed cup each broccoli, potato cubes and
quartered Brussels sprouts, or veg of your choice
2 ripe tomatoes, chopped
1½ teaspoons salt
2 tablespoons ghee
2 teaspoons cumin seeds
small handful curry leaves
½ teaspoon yellow asafetida powder
½ cup chopped fresh coriander leaves
wedges of lemon,
some chilled yogurt,
and extra ghee for serving
Bring to a boil in a saucepan the mung beans, water, bay leaf, ginger, chili, turmeric and coriander, then reduce to a simmer, and cook, partially covered, for about 15 minutes, or until the beans start to break up.
Add the rice, vegetables, tomatoes and salt, increase the heat, and stirring, bring to a boil, then return to a simmer, covered. Cook, stirring occasionally, for another 10-15 minutes, or until the rice is soft.
Season: heat the ghee in a small saucepan over moderate heat. Sprinkle in the cumin seeds, fry until a few shades darker, and add the curry leaves – careful, they crackle. Sprinkle in the yellow asaffetida powder, swirl the pan and empty the fried seasonings into the khichari. Stir the seasonings through, then return to a simmer and cook for another 5 minutes or so, or until the rice is fully swollen and soft. If you desire a moist khichari, add a little boiling water now.
Serve: fold in the fresh coriander, and serve the khichari piping hot with a drizzle of warm ghee, and the accompaniments suggested above.
SABHUDANA CUTLET WITH COCONUT CHUTNEY
Ingredients:
Sabhudana 1/2 Kg.
Curry leaves 4 leaves
Green Chillies 3 to 4 finely chopped
Coriander leaves for garnish
Peanuts 50 gms. (Powder)
Lemon Juice 1
Black pepper powder 1 Tsp.
Salt to taste
Oil for Frying
Pototes _ 4 big size (boiled & mashed)
Wash Sabudana and soak in water for one hour. Drain for one hour. In a bowl add sabudana and add all the ingredients. Make a dough. Make small balls from the dough. Deep Fry.
For Chutney (Coconut) :
Ingredients :
Green Chillies 6 - 7
Coconut 1
Green corriander 1/2 bunch
Cumin seed 1 Tsp.
Lemon Juice 2
Add salt to taste
In a mixer add chopped coconut & all the other Ingredients. Transfer it in a bowl.
For Teadka :
In a small pan add 1 tsp oil & then add 1 tsp mustard seeds, when
mustard seeds began to crackle add 2 to 3 curry leaves, then garnish this
tadka over chutney.
SINGARA POTATOES CUTLETS WITH TAMARIND CHUTNEY
Ingredients :
Singara Flour 1 Cup
Boiled smashed potatoes 1/2 kg.
Green Chillies 2 to 3 finely chopped
Salt to taste
Corriender leaves
White Pepper Powder 1 Tsp.
In a bowl add all these ingredients & mix well. Make round balls from this. Stuffing & shallow fry it till Golden colour. Serve it with tamarind chutney. Soak a Tamarind in Lukewarm water for about 30 mins. & then force through a strainer. Now in a same pan add this tamarind water when the boil comes add 200 gms sugar or Jaggerry & stir well for about 30 mins or till it become thick.
SINGARA POORI WITH CURD POTATOES
For Paste:
In a bowl add singara 1/2 kg. add 1 tsp oil & water & make
soft dough. Make small balls & make poori through poori maker &
deep fry it till Golden brown.
Curd Potatoes
Ingredient :
Curd 1 Cup
Potatoes 1/2 kg.
Green Chillies 2 to 3 finely chopped
Cumin seed 1 tsp.
Mustard seed 1 tsp.
curry leaves 2 to 3
Green Corriender For Garnishing
Kasturi Methi 1 tsp.
Salt to taste
Cumin Powder 1 tsp.
White Pepper Powder 1 tsp.
Ghee 2 Tbsp
Turmeric Powder 1 tsp.
Boil potatoes & cut with knife into small pieces. In a pan add ghee then add curry leaves, cumin seed, Mustard seeds, chopped Green Chillies, then add beated curd, when boil comes. Add turmeric powder, white pepper powder, Cumin powder, Kasturi Methi then add potatoes. Keep in slow flame for about 5 to 7 mins. then add 1/2 cup water & again keep it for 5 mins. in slow flame & in the end add salt. Transfer in a bowl & garnish with green corriander leaves. Serve with Singara Poori.
SINGARA PUMPKIN PAKORA
Ingredients :
Pumpkin 1/2 kg finely chopped
Singara Flour 1 cup
Green Chillies 1 tbsp finely chopped
Cumin Powder 1 tsp
Salt to taste
Oil for Frying
In a bowl add Pumpkin & in that add all the ingredients & mix well. Now take oil in a pan & deep fry it. Serve with Tamarind chutney.
SWEET POTATO HALWA
Ingredients :
Sweet Potato 1/2 Kg.
Sugar 100 gms.
Ghee 150 gms.
Green Cardamom Powder 1 Tsp.
Boiled Almonds 50 gms. (Soaked in hot water)
Boil the Sweet Potatoes in pressure cooker for about 10 mins. In a Kadhai add Ghee, then add mashed Sweet Potaoes & stir for 10 mins. in slow flame. Then after 10 mins. add sugar. Keep on stirring for 5 mins. Halwa is Ready. Transfer it in a bowl & garnish with green Cardamom powder & chopped almonds.
ALU POSTO (POTATOES AND POPPY SEEDS)
A dry accompaniment to a meal of rice and curries/sabjis.
Ingredients:
Potatoes - 500 gm.
Nigella seeds - a pinch.
Green chilies - 6 gm.
Sugar - 4 gm.
Poppy seeds - 20 gm. (heaped)
Oil - 30 ml.
Ghee - 25 gm.
Red chili powder - 5 gm.
Salt to taste.
METHOD :
Heat oil and add nigela seeds. Add diced potatoes and fry lightly for
10 mins. Grind poppy seeds with a little water and add to the potatoes.
Cover with lid, stirring occasionally and adding 2 tbspn. of water. When
water dries and potatoes are done, add green chilies, sugar, salt and red
chilly powder. Top with ghee and allow to cook for one minute. Serve hot
with rice.
Time taken -- 20 mins. Serves -- 4.
LUCHI - pooris (Bengali puris - pooris)
Ingredients:
500gms Flour
2 tbl spoon refined oil
salt according to taste
warm water to knead the flour oil to fry the
pooris in.
Method:
- knead 500gms of flour, 4 tbl spoon of oil & salt according to
taste with warm water.
- make small balls (like a 10 cent coin NZ cents).
- flatten them into round chappatis - pooris - about 3-4 inches
in diametre.
- deep fry them in ghee so they are cooked but still white to
light brown
serve hot
Bengal Royal Rice
Preparation and cooking time: 50 minutes
Yield: 6 to 8 persons (or two Bengalis)
Ingredients:
1 ½ Cups Basmati rice, white or brown
1/2 tsp Saffron threads
3 Cups Purified water
2 tsp Sea salt
3 tsp Nutmeg
1/3 Cup Ghee (clarified butter)
1/4 Cup Cashew bits, or halves
1/4 Cup Almonds, slivered
3 Tbsp Raisins
1 tsp Fennel seeds
1 Cinnamon stick
1 tsp Cumin seeds
6 Pods, Cardamom, bruised
6 Whole Cloves
1 tsp. Black pepper
1/4 tsp Cayenne pepper
1/2 tsp. Asafetida, (a spice similar in flavour
to onions and garlic), can be found in most natural food stores.
2 Tbsp Coconut, shredded
1/3 Cup Green peas, frozen
1/4 Cup Raw sugar
Method:
1.Wash, drain, and dry the rice.
2.Boil the water, salt, saffron and nutmeg in a 2-quart
saucepan over a moderate heat. Keep it covered to avoid evaporation.
3.Heat 2 tablespoons of the ghee in a 4-quart saucepan
over moderate heat. Add the cashews and almonds and toast. Remove with
a slotted spoon and add the raisins for a couple of seconds until they
swell. Remove and place them in a bowl with the cashews and almonds.
4.Heat 2 tablespoons of ghee in same pan. Sauté
the rice for 2 to 3 minutes over moderate heat; then add the boiling water.
Stir, raise the heat, and bring the water to a full boil. Immediately reduce
the heat to low, cover with a tight fitting lid, and gently simmer, without
stirring, for 15 to 20 minutes or until all the water has been absorbed
and the rice is tender and flaky.
5.Remove the rice from the heat, leaving the lid on for
another 5 minutes to allow the rice to become firm.
6.Place the remaining ghee in a heavy pan over moderate
heat. Stir-fry the fennel seeds, cinnamon stick, cumin seeds, cardamon
pods and whole cloves for 1 minute. Add the black pepper, cayenne, asafetida,
and dried or fresh coconut. Sauté for 1 minute and then add the
peas, sugar, nuts and raisins. Remove from the heat.
7.Carefully combine the cooked rice with all the other
ingredients.
Serve in a beautiful
bowl befitting this beautiful rice.
Patisa (Soan Papdi)
Ingredients
1 1/4 cup gramflour
1 1/4 cup plain flour (maida)
250 gms. ghee
2 1/2 cups sugar
1 1/2 cup water
2 tbsp. milk
1/2 tsp. cardamom seeds crushed coarsely
2 tsp. charmagaz (combination of 4 types of seeds)
(Charmagaz paste: Seed mixture - muskmelon, watermelon,
pumpkin, cucumber seeds in equal quantites.)
4" squares cut from a thin polythene sheet
Method
Sift both flours together.
Heat ghee in a heavy saucepan.
Add flour mixture and roast on low till light golden.
Keep aside to cool a little, stirring occasionally.
Prepare syrup simultaneously.
Make syrup out of sugar, water and milk as shown in section on syrups
and thread test below.
Bring syrup to 2 1/2 thread consistency.
Pour at once into the flour mixture.
Beat well with a large fork till the mixture forms threadlike flakes.
Pour onto a greased surface or thali and roll to 1" thickness lightly.
Sprinkle the charmagaz seeds and elaichi and gently press down with
palm.
Cool, cut into 1" squares, wrap individually into square pieces of
thin plastic sheet.
Store in airtight container.
Making time: 45 minutes
Makes: 20 pieces (approx.)
Shelflife: 2 weeks
Thread test:
Consistency in sugar syrup is measure by the thread test. Whenever
slightly cooled syrup checked by the pinch method, between indexfinger
and thumb, it forms threads depending on how much it has boiled. If no
thread is form and pinching shows only wateriness then no thread is formed.
Following is the thread test (tar) to check required consistency of
syrup (chashni). If no thread is formed, but there is stickiness in the
syrup when tested, then it is 3/4 tar (thread). This consistency is generally
used in dipping sweets like, gulabjamoon, boondi, jalebi, imarti, etc.
Boil some more and when 1 tar forms, it is used in soaking pancake pancakes
like malpua. On further boiling two tars are obtained and this is used
in sweets like burfis, mohanthal, etc. At this stage a drop of syrup dropped
on a plate will form a soft ball when cooled. After this stage do no stir
briskly and continuously or the sugar will recrystallise. Still further
boiling will form 2 1/2 to 3 tars and this syrup is used to get a white
coating of sugar on sweets like balushahi, surti ghari, etc. At this stage
when the syrup is dropped in a plate it will form a hard ball when cooled.
Following are the steps shown to make sugar syrup (chashni) in the
right way.
Take sugar and water in the ratio of 2 : 1 1/2 unless other wise mentioned.
Put both in a deep saucepan to boil, stirring occasionally.
When the mixture comes to a boil, add 1/2 cup milk.
When a thick scum is formed on the surface of syrup, it is time to
strain.
Always use a metal strainer or moist cloth to strain the hot syrup,
never plastic.
Put back to boil, checking the consistency required as above.
Check frequently, because once the first thread forms, it proceeds
to thicken to the next stages very quickly.
Use as required in the recipe.
Make syrup side by side of making the recipe, reheating the syrup too
many times will alter the texture of the resulting sweet dish.
To save time, prepare the syrup on a second burner, while making the
rest of the recipe. This will avoid excess wastage of time and unnecessary
cooling off, of the fried flours, etc. as the recipe demands.
Raspberry & Hazelnut Ice Cream
(low salt)
A quick and simple recipe for ice cream that does not require an ice
cream maker.
Serves 4
Preparation time - 15 minutes
Cooking time - No cooking, but 2-3 hours chilling required
Each serving contains: 523 calories, 24g sugar,
46g fat, 24g saturates, 0.06g salt.
Ingredients:
250g/9oz frozen raspberries, defrosted
75g/3oz caster (refined granulated) sugar
284ml/½ pint carton double (heavy) cream
50g/2oz whole hazelnuts, toasted & roughly
chopped (optional)
Method:
1. Roughly chop the raspberries & mix with the caster sugar.
2. Whip the cream until it just thickens & starts to hold it's
shape, but not stiff & standing in peaks.
3. Fold the cream into the chopped raspberries with the hazelnuts if
using & transfer to a suitable freezer container.
4. Freeze the mixture until it starts to become solid around the edges.
Remove from the freezer then beat with a spoon, return to the freezer.
5. Repeat this process at least one more time once it has started to
solidify again. Freeze until required.
6. When ready to serve, remove from the freezer & leave in the
refrigerator for 30 minutes to soften slightly.

The Vedic literature says like this, that God has no leg, no hand. Therefore the impersonalists take advantage of it. "Oh, here it is stated God has no legs, no hands." But the next line is, javana grhita: "He can accept everything which you offer Him in devotion."
Now how He can accept? If He has no hand, how He can accept things from us? That means He hasn't got a hand like us. His hand is different. Therefore even though He is situated in the spiritual world, which is far, far away from us, still, He says in the Bhagavad-gita, it is said,
patram puspam phalam toyam
yo me bhaktya prayacchati
tad aham bhakty-upahrtam
asnami prayatatmanah
Krsna says that "A little flower or little water or a little leaf, whatever My devotee offers Me in love and devotion, I accept it." And tad aham bhakty-upahrtam. "And because he has brought it with great devotion, therefore I eat." Tad aham bhakty-upahrtam asnami. Asnami means "I eat." Now you can say, "All right, I'll offer these fruits and flower to God, but it is the same. It is remaining. How He is eating?" But His eating is not like my eating, because He hasn't got a body like this. This body is material. If you bring me a plate of fruits, this body immediately swallows it. But He has got spiritual body. He eats... Simply as soon as He knows that you have offered it in devotion, He eats immediately.

White Cheddar - Super-melting Mozzarella
